Stone & starter

Locally stone-ground flour, filtered water and a ten-year-old wild yeast starter we call Gloria.

Time

48 hours of slow, cool fermentation builds the deep flavour and open crumb you can taste in every slice.

The oven

Baked in small batches on traditional stone. A crackling crust, a soft interior, and very little left by lunch.

Slow food,
done properly.

We'd rather bake less and bake well. Nothing is frozen, nothing is rushed, and no two loaves are ever quite the same — which is exactly how a real bakery should be. When you buy from us, you're buying hours, not shortcuts.

Good to know

Before you visit.

Do you cater for allergies?
Our citrus buckwheat loaf is gluten-free, and we clearly label everything baked on premise. We can't guarantee a totally allergen-free kitchen, so please ask at the counter and we'll walk you through today's bake.
Can I order ahead for pickup?
Yes — email us by 4pm the day before and we'll set your order aside for pickup from 6:30am. For event quantities (20+ pastries, wholesale), please give us two days' notice.
Can you bake a custom celebration cake?
We do. Talk to us at least a week ahead for bespoke celebration loaves and tarts. We'll agree flavour, size and a pick-up time, and only take payment once you're happy on the day.
Do you sell wholesale to cafés and shops?
We supply a small network of local cafés and grocers on a wholesale basis. If you'd like to stock our bread, get in touch via the form below and we'll talk through volumes and delivery.
